We did and it was a lot easier it does need a lot of documentation translated from English to spanish
It cost us approx 700€ for both of us but we'll worth it it for the time and effort put in ⁹

I have recently managed to get the NIE fairly quickly and a lot more cheaply than this, in fact €35 for each of us. If you message me I will give you the lawyer's details. I didn't need heath insurance - that is only needed for full residency.
