Where to stay in march and april

Hi all
Hope I have found the right place for this.
We are looking to spend a month on the island (covid permitting) mid march to mid april next year. We have never visited the island before and looking generally it looks like at that time of year the south will be the best weather ???? We have also been recommended maspolomas as a good place to be ??? .
We like a mix of enough to do during the day generally walking and people watching , a few bars and restaurants easily accessible but not in the middle of town. Villages great mountains not sure as the weather. We will have a car so a little further out should be no problem. Any recommendations,comments or tips would be greatly appreciated.
